Frying turkey in Tallow! page

So, i spend this weekend cutting up ~10gallons of suit and rendering it . . it turned into about ~ 2gallons of tallow. Hoping to fry a turkey in it for thanksgiving

Any advice? Anyone dont this? I know most people use peanut oil.

the only advice i've heard that i can parrot is be wary when putting the bird in, that the tallow doesnt overflow and pour out

I saw a video of it being done he was standing well back with turkey on a pole fulcrum and he lowered it very slowly.

I had the pot in a water bath for ~20 minutes or so before i poured it into the plastic bottles, it was hot, but not too hot. Hopefully its ok
