    Does anyone have a cream of cauliflower recipe?

    1 head of cauliflower
    1 onion diced
    2 tbsp butter
    1/4-1/2 cup of almond milk (optional, can use stock, dairy milk, cream or water)
    2-3 cups water or stock


    Sautee the onion in the butter. Cut up head of cauliflower (about 6-8 cups). Throw cauliflower in with onion. Barely cover with water or stock (you can always add more but taking away is hard). Boil until cauliflower is tender. Throw into a cuisine art and puree until smooth and fluffy, adding additional liquid (water, stock almond milk, real dairy) until desired consistency. Salt and pepper to taste.

    Made some last night. It is my absolute favorite way to eat cauliflower.

    Yes! I make the best mashed cauliflower. People often mistake it for mashed potatoes and want it instead of mashed potatoes. I am making it for Thanksgiving this year.
    Mashed Cauliflower
    1 large cauliflower cut and cleaned
    boil in enough water to cover
    add one Tbls of Chicken boullion or cook in chicken broth until very soft (12 minutes?)
    Drain and add back to the boiling pan (heat off)
    add 1 cup of shredded chedder cheese
    1/4 cup parmesean cheese
    1/4 heavy cream or milk or half and half (the more fat the better)
    3 Tbs butter
    1Tbs of Dijon mustard
    whip with electric beeter until smooth
    I have covered this and put it in the oven on low so I can cook ahead. You can add a little parmesean on the top for an nice affect from the oven.
