    Perfect tropical paleo recipe: Tom Kha Gai aka Thai Chicken & Coconut Soup

    For those that have never had it, tom kha gai is a chicken & coconut milk soup infused with some highly aromatic Thai ingredients. Imagine tropical coconut, silky chicken and mushrooms, hot peppers, citrusy herbs and bright zingy lime juice in a bowl, and you'll get an idea of what it tastes like. As long as you buy a gluten-free fish sauce, it is 100% paleo, not to mention super healthy and delicious! You can find the recipe on my blog here.

    This looks yummy!! How do you think it would do with some additional veggies added in? I'm not very familiar with Thai food so I wouldn't know what to add, but one-pot meals are the bomb and with just a couple more veggies this would be perfect! Do you think some greens added in (spinach or kale, etc...?) would be okay?

    Yeah, a few more veggie suggestions to add in? And another thing, I can't find a relative of ginger here.....hope the ginger works okay I have a fridge full right now anyways!

    The galangal root is like ginger on steroids. Ginger should be fine.

    This is a great soup and can hAndle additional veggies or other meats. Shrimp is quite good. For veggies, I would suggest things like thinly sliced carrots, broccoli, basil leaves,...

    When I gets a cold (rare now) or my housemate gets one, i always make what I call Thai penicillin - tom kha gai or tom yum gai (chicken broth instead of coconut milk.) My recipe

    shine4jesus, mushrooms are the only traditional veggies that go in this soup but I don't see why you shouldn't add more! I would go with bland, light-colored and soft veggies like chayote, zucchini or sliced cabbage in order to preserve the flavor profile of the soup. Also if you are adding extra veggies, increase the amount of broth of 0.5-1 cup so that it doesn't become like a stew.

    I made this a few times last year - it is delicious. One change I made it that to make the base of the soup I blended chicken stock and roasted cauliflower instead of coconut milk. I like it so much better than with the straight coconut. It has a lovely nutty, sweet taste.

    If you can get the galangal root - give it a try. It is a very soft, floral taste compared to ginger. Really lovely! But ginger is good too.
