I have two egg whites sitting in a bowl in the fridge - they are left over from making mayonnaise. I can't just throw them out but can't think what to do with them?? Any ideas welcome! I did think of cutting pork steaks into fingers, dipping them in the whites then in almond flour and Parmesan as a sort of breading - would this work?

Just toss them in with your morning omelette if nothing else comes up first. Extra protein.
I also use a blender recipe for mayo from the Joy of Cooking that uses a whole egg.

Maybe its due to my youth and inexperience, but whenever I have left over egg whites I just throw them in a skillet and eat. Nothing fancy....just cook and eat.
Omelette - great idea! Shrimp, more egg, garlic - and eat with the mayonnaise on a salad. Lunch - sorted!

I'd make a soufflé. whip your egg whites with the whites of a couple more eggs and mix the yolks into a veggie puree (I like winter squash) with some good grated parmesan and a little milk. fold the whites into the yolks and veg and bake until fluffy with a crispy top. (google for a more precise recipe)

I always end up with too many yolks because I make so many of my primal crepes!
