well after doing a grueling workout tonight via UD2 and the many inspirations of choco's porn thread, i went ahead and made this dessert for my refeed. Hardly any fat, high carbs moderate protein. Here we go!
Cinnamon Rolls
Ingredients:
2 tbs of non fat cream cheese
1/2 cup TJ's 1% Kefir
1 tbs yeast
1/2 tsp organic brown sugar(i know but yeast needs the sugar to proof, plus its hardly any at all)
2 egg whites
1/4 cup applesauce(unsweetened)
1 cup of white rice flour
1/2 cup tapioca flour
2 1/2 tsp Xanthan Gum
1/4 tsp baking soda
2 tsp baking powder
1 tsp vanilla extract
2 tbs of stevia(dif brands are stronger than others, i actually used sweetleafs drops that had vanilla cream. used about 15 drops.)
1/4 cup warm water.
Filling:
2 tbs of stevia powder
2 tbs of ground cinnamon or more if u want.
Glaze:
1/2 cup of 0% fage greek yogurt
vanilla extract, (i just used the stevia drops about 15-20)
1 scoop of vanilla whey for the texture and flavor this is optional but y not for the extra protein, its for refeed anyway.
Instructions:
Get water to 110-115 temp if u have thermo. Combine warm water, yeast and sugar, dissolve yeast well, i let it sit to proof for about 5min til double in size.
Preheat oven to 375.
In one bowl combine all dry ingredients for dough. mix well.
In another bowl combine all wet ingredients cept yeast til after the 15min from proofing. mix well.
Mix together to form a dough. mix well to have no lumps, i just used a whisk then a silicon spatula. One thing that was a lil puzzling was that it was a lot softer than i imagined it would be nonetheless its works.
Now lay plastic wrap on a counter enough to make a square of 13"x13", lay dough on wrap. use another piece of wrap to lay on top of the dough. I tried using parchment paper it just got stuck to it.
Using a roller, roll dough into a square roughly 12x12.
Remove top wrap layer and combine filling mixture and throw it on top of dough, dont be shy on the filling this is what makes the cinnamon bun awesome. Once u have the filling laid out.
Begin to roll the dough into a cylinder shape, like a burrito if u will. using the bottom wrap as an aid to push it into the shape, peeling it off as ur rolling it.
Heres what i did to help with cutting, i made this before i did my workout so i threw it in the freezer wrapped for a few hours, so it can harden for easier cutting. trim the edges off. It made 7 nice pieces. place pieces onto baking pan, i used non stick extra virgin olive oil spray to grease it.
Now bake for 25mn or so til golden brown depending how u like it. let it cool a few min.
Combine glaze ingredients together, i used a few drops of water to get a lil smoother consistency. since yogurt is quite thick.
Top the buns with glaze and there u go. Sry for the long post but its worth it, was awesome as hell.

each one serving is roughly, depending how thick u put the glaze on. plus its more like 6g of total fat but fitday rounds up

Cinnamon buns? GAHHH HOW HAVE I NEVER THOUGHT OF THIS? BRILLIANT! I'm going to rip you off for a change! I don't think I'll be able to bring myself to buy fat free cream cheese because there must be 20+ ingredients in a block, but it's nothing more yogurt can't cure.
