I have a recipe for chicken stir fry on my blog. It's not very difficult and should fit their criteria while still remaining primal.
Help me! I have been primal for awhile now...and I have just started working a new job working with Special Needs adults...and I have been asked to work with our clients on making healthy nutritious dinners. We will be meeting at our site and cooking up some meals and then eating them. Hopefully clients will be able to re create some of these meals on their own. I was asked to do this becuase my bosses see what I eat at work and think that I eat incrediably healthfully...while this is true they don't realize that I eat a primal diet.
I have some latitude here...but was told that meals need to be low in fat and heart healthy. I have a few clients that are diabetic and so they are encouraging me to plan like I do at home...whats the protein? Whats the veggie? and Whats the other veggie? The powers that be are ok with my planning meals that don't have a lot of (or any) starchy carbs. But are insistent that it be low fat as well. I am not going to win this battle and so have to work around it as best as possible...we have doctors and social workers, and parents, and clients determining what our clients eat...so I will go with their plans....no one is going to listen to lowly me...the new hire (you know new hires...they don't know anything!)
All of that being said....does anyone have any super simple dinner ideas? Keeping in mind Protein, veggie, veggie? I have found some great chicken recipes that will fit the bill and plan on making fun salads (with our own dressing...no store bought crap at FIT CLUB) and a veggie side dish and feature the chicken or fish...or.... Any meals that you can make with kids would be greatly appreciated...as that is basically what I am doing.

I'm trying to do low fat primal tomorrow and EEEEEEEEEEEKKKKKKK not easy and sounds unappetizing. I understand why people have to eat soo much sugar to make up for the fact that there is no fat! I wish I had something helpful for you... I sympithize, that is frustrating!
I think I can hide fat...using oils to cook and such....and using oil for flavor...and just a touch might remain lower fat while still tasting darn delicious...and veggies are always delicious...oh wait I am nuts...I just happen to LOVE veggies...and fruit...not that I enjoy that nearly as much as I used to...
