Country Rib Recipe anyone?
I'm looking for a recipe to make some country ribs that does not have bque sauce and is primal.
The key here is slow cooking with smoke. I season liberally with garlic powder, kosher salt, paprika, cayenne pepper, black pepper, and onion powder. Use indirect heat and some hickory wood for smoke. Cook these bad boys for about two hours. After about thirty minutes, I start basting about every 20 minutes with garlic infused butter. I just melt my butter about an hour before and stir in some chopped garlic allowing it to sit at room temperature.
I edited this to add that country style "ribs" are one of my favorite things to cook...period. The quality of the meat you start with is obviously essential, but, even a poor cut can be good cooked like this. And it is generally quite cheap, so for me, it is a go-to item.
