You stole all of mine! Mashed veggies and creamed/pureed soups. You can add almond butters to certain soups (curry are the first to come to mind).
Smoothies would be great too although I really prefer soup to smoothies. Don't forget carrots, parsnips, winter squashes and cauliflower for soup.
Here's one for when you start healing
Chicken carrot ragout.
2 cups carrots chopped
4-6 chicken thighs (skin removed) Chopped
1 onion, diced
2 ribs of celery, diced
Sautee onion and celery in butter for 5 minutes on medium heat. Add carrots. Sautee on higher heat until everything is browned and softening. Add chicken and stir well. Lower heat and cover with lid. Cook indefinitely, checking occasionally to see if you need to add stock or water. Generally the veggies let off enough moisture to create a nice sauce that needs little moisture added but the mixture should have some sauce to it. You can cook this down to almost mush if you want to. It is GREAT!
