...And if you do try it at home, I definitely recommend you not try squishing a small scoop of espresso-flavored Laloo's ® Goat's Milk Ice Cream between two halves of one, the next day. Because it's f*king glorious.

I cut out all the sugar (but kept the honey) and added a little extra coconut and almond flours to compensate for the liquid in homemade cinnamon extract. I'd probably leave out the leavening next time, but either way they were really very good. Even better the next day!

Yeah, they were fairly crumbly, especially warm out of the oven. The next day they held up better; they were great with some homemade almond butter (with a little dark chocolate blended in =)--almond nutella? ).
The next time I make them, I'm going to try leaving out the baking powder and doubling the almond flour. I don't think they needed leavening at all, in fact the first batch had a very open, lacy texture, like those butter cookies? The next batch I opened the oven partway through and used a silicone spatula to spread the batter out and collapse the bubbles. Those were much thinner and crispier.
