Possible to make an apple dumpling type dough with almond/coconut flour?
like that you can roll out cut into sqaures and put an apple into then bake like a regular apple dumpling?
You can definitely do it with white rice flour or tapioca flour. Why not use those? They're lower in anti-nutrients than coconut flour, easier to work with and MUCH less toxic than nut flours, which are like baking with heavily oxidized omega 6 calorie bombs. I'd rather eat regular all purpose flour than baked almond meal. White rice flour and tapioca flour is cheap and readily available, too.
