What to do with mayo?
Duck fat makes great mayo, but bacon mayo (I also mix with something else) is indeed excellent.
I hardly ever make it because I hardly ever get the urge. But as she says above it's really great for any meat that's cold, or really anything lean or not as juicy or full of good fats as you might like.
The other biggie for me that's not on the list above is Hard-Boiled Eggs. Yum!
You can also use it as the base to make dips.
