Ok all here is my twist on scotch eggs… ADD BACON
Ingredients,
1 lb of ground sausage
6 hardboiled eggs
Pack of Bacon
First hard boil 6 eggs, (I soft boil mine) and peal. Separate the sausage into 6 equal balls. Flatten the sausage balls into thin pancakes and wrap around your eggs. Wrap your bacon around the eggs.
Bake at 350-375 for 20-30 min rotating halfway through depending on how crispy you like your bacon.
Eat hot as is, eat cold cutup on a salad… the choice is yours and yours alone….

when I made these I had trouble getting the meat to stick to the eggs, I found that coating the egg with a thin layer of fresh grated parmesan was a great way to get em to work. (I used another coat of parm on the outside, but bacon sounded even better)
@drssgchic crustless quiche is good for pre-cooked bfast too.
