    Eggplant lasagna



    I've made it a few times now, & it's pretty delicious!

    ILOVE the recipe. I do not like the "CONGRATULATIONS - YOU HAVE WON" bit.

    Jst had leftovers, awesome yet again.

    I wonder if you press thin eggplant or zucchini slices under a rolling pin will we get more of a noodle texture?

    This is not the same as moussaka, which I love! This recipe is heavy on tomato flavors and Italian spices and is missing the lightness of the bechamel and the cinnamon flavors of a good moussaka.

    Do you have a good primal moussaka recipe? I bought 2 eggplants for the lasagna and wound up with one left over.
