    No, all your good work hasn't been undone. But, yes, consuming that much gluten in one meal (or even over a period of days) is going to make you feel like sh*t.

    When it comes to wheat, barley, rye... strive for 100% because there is still going to be trace gluten on everything -- especially if you eat out. Those proteins are sticky suckers, and they can cause autoimmune responses well after ingesting them.

    I am a big fan of cheating, but I won't cheat with wheat. It makes me feel lousy.

    Lakefront Brewery in Milwaukee, WI has a gluten-free beer called New Grist, though I haven't tried it, nor have I met many who like the taste. (They make many other very nice beers, though.) Most people I know that drink gluten-free alcohol are going for wine, spirits, or hard ciders.
