WARM sweet potato/squash salad - YUMMY
Okay I love this recipie. You can use, lessen amount, or omit the maple syrup/raw honey depending on preference in dressing (I used as written but didn't use as much of the dressing as it made by about half):
Warm Sweet Potato Salad
3T cider vinegar
3T maple syrup or raw honey
3T olive oil
1 lg. red onion, chopped
ham - chop about 1.5 to 2 cups ham into 1/2" cubes
1 pkg frozen spinach, thawed, squozen to remove water!
3 peeled sweet potatoes - cut into 1"x1/3" rectangles that are about 1/2" deep (i.e. they need to be about twice the size of the squash below to not be mushy since squash takes longer to cook)
1/4 lg. butternut squash, peeled - cut into 1/2" cubes
toasted chopped pecans
Toast pecans while dicing veggies/ham. Line sheet pan with veggies & ham, coat in olive oil enough so won't stick. Roast on 425' for about 45 minutes, start on bottom shelf to brown bottom, move to upper shelf to brown top 1/2 way through. Check for doneness. Pour veggies/ham into bowl, add cold spinach (warms up quickly w/hot veggies), stir. Pour some dressing over salad, not too much. Add toasted pecans. Enjoy@
