Coconut Oil with Salmon and Garlic?

I see a ton of recipes involving coconut oil and chocolate. And I use coconut oil for frying vegetables and in bread/cake recipes. But what else goes well with virgin coconut oil? Would it taste good with a non-sweet dish like salmon and garlic?

I've cooked salmon in coconut oil, it tasted fine. I do a lot of my savory cooking with coconut oil, I've never felt like I could taste it in the dish. Maybe my tastebuds are off kilter.

Would maybe depend on the oil. I'm using Nutiva just now and find it has a pretty neutral flavor in a dish.

I've got Bronner's virgin coconut oil. It's not too coconut-y, so I'll give the salmon and garlic thing a whirl tomorrow (still trying to finish off a pot of beef stew ).
