I used coconut aminos (1) Raw Organic Vegan Coconut Aminos 8 fl oz: Amazon.com: Grocery & Gourmet Food as a marinade when I made Paleo Beef Jerky. I think it has the same flavor profile as soy sauce, without containing either soy or wheat.

YES to raw coconut aminos. Perfect substitute for soy.
I use coconut aminos, but it is very expensive and a bit sweeter. So generally I will put a bit in some sesame oil when I'm dipping things like sashimi and hand rolls.![]()

Kikkoman makes a gluten free soysauce. Can't vouch for it as I haven't tried it:
