    Are sprouted peanuts and legumes okay?

    I personally just go with real nuts, but I know some people that have a peanut addiction O_o
    Would soaking/sprouting and then maybe roasting make then relatively edible?

    Some of the phytic acid is reduced, but there's still a substantial amount. Roasting them will neutralise some antinutrients but will oxidise the PUFAs. Just encourage them to reduce their consumption, one peanut less a day or something.

    Soaking and boiling removes most of the lectin content in legumes. With lentils, in particular, antinutrient levels are pretty much non-existent.

    Almonds are roughly the same as peanuts in terms of omega 6 content, lectin content, phytic acid content, calories and macronutrients. Actually, peanuts contain significantly less phytic acid, and sprouted peanuts contain about 50% less phytic acid than almonds. The only real benefit I see that almonds have over peanuts are peanuts are frequently found contaminated with alfatoxin. If you can find alfatoxin-free peanuts, they're really no worse than almonds IMO.

    Sally Fallon has a whole chapter about preparing nuts and legumes to make them safe to eat in "Nourishing Traditions". I'm certainly going to try lentils prepared by soaking in water and whey, and some of the nuts.

    After all, they do seem to have loads of the minerals that Fitday shows me to be low on...
