2 C Tapioca Flour
1/2 grassfed cheese
2 T BP
1/4 C grassfed butter
1 tsp any quality salt
2 free range or organic eggs
1-2 T purified water
Mix everything together, divide batter into 6 greased ramekins or large muffin pan. Bake at 375 2o minutes or until fluffy and golden.
i'm assuming that must be a 1/2 cup cheese?

I amended my recipe and use olive oil in place of butter and pecorino cheese in these. Very sour, very soft and very unctuous. I eat these almost always with deep Italian-style fish stews.
I do wonder whether some cream cheese whisked in and a slug of some local honey might make up sweet versions of these.
I've also made them very sloppy, poured out like batter, which presents as something a bit like Yorkshire Pudding.
Can you use arrowroot in place of the tapioca with good results, do you know? Thanks!
