    Separated Coconut Milk

    When I buy coconut milk, I always shake them first and only buy the cans that don't slosh around. When I open them, I dump out the watery part and am left with the thick, creamy good stuff. I blend it with frozen berries to make the most delicious ice cream substitute I've found yet.

    My question.....is the thick, creamy good stuff similar to what I would get if I bought some coconut cream? This seems to be a cheaper alternative, even after dumping half the can down the drain. Does anyone else do this?

    the watery stuff is coconut water (loaded with potassium & way good for you), the solid stuff is coconut cream.
