I recommend using tapioca flour. It's just a root-based starch, not a grain. Chebe makes a fantastic bread and pizza mix with minimal ingredients: tapioca flour, sea salt.

In my experience, coconut flour is not good for pizza, and I am not a fan of heating almonds or any nuts at high temps.

I have made cauliflower+egg based crusts before, w/out any cheese, and it was great. I've also made cheese+zucchini crusts, which were obviously delicious. But they take a fair amount of time.

What I like to do is mix eggs with psyllium husk (maybe 2 eggs to 3 tablespoons. It kind of doesn't matter what you start w/ because you can add eggs or water as it thickens the longer it sits). I cook it like pancakes/tortillas or let it get crispier in the oven. Mark did a post on psyllium husk at one point. I think he said it was weird to eat since it's literally the husk of a plant (it's what metamucil is made of) but still okay.

You can also try using ground beef or turkey for a crust... which would give you a "meatza."

I've basically ditched flour of all kinds, and once you've done it for a month you will not miss it.

Chebe is good. I haven't made it in awhile, but I have tried it with and without the cheese it recommends and I think I preferred it without. I also remember that I would cook it in a pan like a tortilla to get it crispy before topping it and baking/broiling it. That way the crust was crispy and didn't get soggy in the oven.

Anything (non starchy) vegetable based is fine.
