Bacon Fried "Rice"
I had to put this in it's own thread, it turned out that fantastic! It's no more labor intensive than regular fried rice but so much healthier!
1 head of cauliflower, shredded
6 cups of mixed vegetables (I used onions, peppers, celery, mushrooms, water chestnuts, baby corn)
1 lb of bacon
1/3 cup of tamari
salt & pepper
Preheat oven to 400. Place your shredded cauliflower on a foil-lined cookie sheet, sprinkle with salt and pepper. Stir around every 15 mins. Take out when lightly golden brown (about 45 mins.) Cut bacon into 6 pieces, fry until done and remove from the pan. Remove 2/3 of the bacon grease for later, add onions, celery, peppers. Stir-fry until half cooked, add in remaining vegetables. Remove vegetables and place in the bowl with the bacon. Heat remaining bacon grease in frying pan, add in your cauliflower, fry until golden brown, add back in your vegetables and bacon, add in tamari, serve once it's all mixed in.
PS. You can omit the baby corn, my kids love them and we rarely eat them so I don't mind them having them occasionally.
