I tried Mark's Zucchini Egg bake from his book and it was okay. But the wife really liked so I made it again. This time I added more eggs, 1tsp of agave sweetener, and a bag of sliced almonds. Oh my gosh! It's way good. The extra eggs firm up the mixture so it's more of a quiche. The almonds make is smell GREAT. The sweetener makes you think you are eating coffee cake.
