Microwave...........are you serious?
Im sure im not the first person to throw these together, but lately ive been making this as an after dinner dessert and its just awesome.
Very basic, quick and easy!
Mix up an egg or 2 with some shredded coconut and throw it in the microwave on a low setting for about 45 seconds or so. Play around with the time but basically you dont want the egg to cook, you still want it to be mushy. The coconut fluffs up too and absords some of the egg.
You can add to the mixture; 100% cacao, nuts, berries, cinnamon. Whatever! be creative.
It also makes a good cereal substitute for those breakfasters, just add a bit more coconut at the end to thicken it up a little more.

I'm living in a dorm with just a microwave and a fridge. I made sure to pack shredded coconut and a carton of eggs. This is going to be my breakfast one day this week. THANKS!
Oh that sounds great! I'm going to try this for brekkie tomorrow morning as brekkie always seems to be the hardest for me!

rhubarb (still have to find how to sweeten...maybe a grated apple would work) with sweetener, desiccated coconut, coconut cream, "nuttela" or cocoa, if you do dairy add a heaping teaspoon of mascarpone. It was like having a real good porridge. Was planning to take to work but sat down at 6am and ate the whole lot. Was not hungry till 13:00. It is very filling and that was without adding nuts and berries.
I will tweak this one for sure.
