I made pancakes with
1 cup young cocnut meal (1 cocnut)
2 small bananas
1/2 cup tapioc starch
2 eggs
1/2 tsp of baking powder
1/2 cup of almond milk
The consistency of the batter was similar to normal, and the cakes browned well, looked and felt like normal pancakes. But they were gooey inside. I kept the griddle low, and baked them for a while.
Any thoughts how to make them dry on the inside?

I want to stop buying all nuts and nut products with the exception of fresh cocnuts, so peacun-almond version is not viable for me. I only used almond milk because I still have some left, I would be using coconut milk/water next time. The cakes were really thin.
