    Is ghee an oxidized fat?

    Hi everyone,

    Long time lurker and first time poster.

    I make my own ghee from Kerrygold unsalted butter. I am working with a naturopath on a health problem and he gave me a list of foods to avoid. One category was "oxidized fats", which included ghee. It's my understanding that the saturated fats in ghee are not easily oxidized. Could the cholesterol be oxidized? Do you think there is any reason for me to avoid using ghee?

    I really should know this considering I'm a chemist!

    In short, no, it doesn't seem to contain oxidized cholesterol. I'm a ghee-lover, FWIW. But I hadn't considered that aspect of it.
