I prefer to cut sweet potatoes into thick wedges instead of skinny fries. I just toss them in evoo, garlic salt, and pepper, then bake on 425F until they're soft and lightly browned. Flip them half way through. They wont get crispy like French fries unless you deep-fry them or overcook them.

I do the same with my fries except I coat them with melted bacon fat and sprinkle with garlic powder. The eat them with a horseradish sauce.

I made sweet potato fries for the kids tonight.
Cut the sweet potatoes into thick fries, coat with oil, bake. Simple and easy.

Then I just have to stop myself from munching down too hard on any that are left over.

I did 375 for 30 min. They were done and soft, held their shape but were "floppy" and not crispy or crunchy. If you want that then a higher cooking temp or longer cooking time.
    The kids ate them up.
