Totally addicting recipe for cashews adapted from the cookbook At Home with Madhur Jaffrey

3 cups raw cashews
3 Tbsp coconut oil
1/2 Tbsp salt
1/2 Tbsp ground cumin seeds
1/2 Tbsp cayenne pepper (I used less because I can't tolerate the heat of cayenne pepper)

Preheat oven to 350 degrees. Add all the ingredients to a ziplock bag and shake to cover. Spread out on a baking tray in a single layer. Bake for 12-15 minutes stirring every 4 minutes or so. Let cool before serving. Yum!!
