Apple and almond pancakes
I thought banana pancakes were amazing until i tried these!
1/2 cup ground almonds
1/2 cup chunky stewed apples
1/2 teaspoon cinnamon
butter to fry in
mix the almonds and the eggs, then add the apples and cinnamon and stir until well mixed.
Drop spoonfuls onto a hot frying pan. cook medium for a couple of minutes then flip.
This quantity made 6 pancakes for me.
I served with a dollop of greek yogurt and a teeny drizzle of honey My apples were really sweet so I didn't need to add any sweetener to the batter. Next time I think I'll add a handful of blueberries to the batter too!
