    Squash Blossoms - ideas?

    Today I scored some Squash Blossoms at a Farmer's Market. I had never had them before, but I've been wanting to try them for a while.

    I stuffed with Garlic Oregano Chevre and sauteed in olive oil. Then I topped with chopped fresh basil and toasted hazelnuts. And they were DELICIOUS.

    What do you all do with Squash Blossoms? I know they are traditionally stuffed and then battered and fried. I thought about trying that with Coconut Flour, but decided at the last minute to just saute them.

    Any other recipe ideas?

    OMG I adore squash blossoms. I used to grow them for chefs.

    Cut pancetta in small cubes, sautee just until fat is rendered, then add garlic until soft. Mix with riccota cheese and herbs. Batter them in egg followed by cheapo parmesan cheese then stuff them and fry them. Serve with a simple marinara ( garlic sauteed in olive oil, add tomatoes cook, for 5-10 minutes, puree.

    I found the squash blossoms at the City Hall Farmers Market.

    But, I also like to go to LaCenterra Market and the Farmer's Market at Georgia's Market on Saturdays.

    It's off the Katy Freeway and Dairy Ashford. Very cool store. They've got a nice buffet--I've never had it, but it looks really good. They have a fantastic looking salad bar and other hot entrees, usually at least one with grass-fed beef and other natural meats, which they also sell in the store. And every Saturday at 1 p.m., they have a farmer's market in the store.

    I have found that when I buy the bulk of my groceries there, and then go to HEB to finish off my list of things I cannot get at Georgia's, my grocery bill has gone down.

    Catherine, I believe they have a Farmer's Market on Wednesdays too. I work downtown so I have never been able to make it. However, they are getting ready to open a downtown location. Woot!

    That is an awesome store! I'm happy to see it's doing so well that they are adding a second store. I just sent the link to my Primal friend who travels between Austin and Houston all the time. I don't think he knows about this place, or he would have said something.

    My very first apartment on my own was over off of Dairy Ashford.

    We have something similar here, locally owned, ridiculous local-farmed produce options, etc., etc., and I always feel so abundantly blessed when I'm there. They also are doing so well they are building a second location across town. Love to see this.
