OMG I adore squash blossoms. I used to grow them for chefs.
Cut pancetta in small cubes, sautee just until fat is rendered, then add garlic until soft. Mix with riccota cheese and herbs. Batter them in egg followed by cheapo parmesan cheese then stuff them and fry them. Serve with a simple marinara ( garlic sauteed in olive oil, add tomatoes cook, for 5-10 minutes, puree.
