    After researching the paleo lifestyle for a year or so, I finally dove in with a personal 30-day challenge in May. I even enticed my 7 and 8 year old daughters to join me. What an exciting month that was for our family! We’ve always eaten fairly healthy, balanced meals but we did rely pretty heavily on rice and oatmeal. I loved finding new dishes and preparations to take the place left by those now undesirable items. It’s been nearly five months and I couldn’t be feeling better! My best friend (who first introduced me to Mark’s Daily Apple) and I have even started our own blog @BiPolarPaleo to encourage each other and share our love of cooking with others!!!

    Since we started at the beginning of summer and we’re always on the go, I haven’t had time to practice some of the paleo fitness techniques. That is my personal challenge for the month, along with getting my girls and spouse to choose fewer “cheats”.

    My plan for this journal is to record my daily patterns...

    Day 01 (09/12)
    Breakfast - chicken apple sausage, coffee
    Lunch - bacon burger (sans bun, of course), salad + oil/vinegar
    Snack - almonds
    Dinner - fresh Alaskan salmon curry and roasted veggies

    Day 02 (09/13)
    Breakfast - apple with almond butter, coffee
    Lunch - leftover curry
    Dinner - beef burger and baked sweet potato fries

    Day 03 (09/14)
    Breakfast - chicken apple sausage, coffee
    Lunch - leftover curry
    Dinner - chicken, avocado, sunflower seed salad + oil/vinegar/spicy mustard dressing

    Day 04 (09/15)
    Breakfast - bacon, coffee
    Lunch - leftover chicken salad
    Dinner - Indian chicken-green bean curry and roasted broccoli, cabbage, cauliflower

    Day 05 (09/16)
    Breakfast - mixed berry smoothie, coffee
    Lunch - chicken, avocado, sunflower seed salad + oil/vinegar/spicy mustard dressing
    Dinner - mixed seafood red curry and roasted eggplant

    Day 06 (09/17)
    Breakfast - bacon, coffee
    Lunch - beef burger and veggies in a lettuce wrap
    Dinner - halibut and sweet potato fries

    Breakfast - salmon and broccoli omelet, coffee
    Lunch - Thai-style lettuce wraps with chicken, sunshine sauce on kelp noodles, and sesame cucmber salad
    Dinner - chicken and shrimp with cajun spice and salad
