    that seems easy. I always thought coconut milk ice cream also uses the meat from the coconut, not just the milk? or maybe the milk is the meat? I get it all confused because there is conconut water, milk and coconut meat.

    i looked at the reader=created coconut cookbook and didn't see a recipe for plain almond milk ice cream. I'll try what a previous poster said and just freeze some coconut milk and blend it up in the vitamix. thanks guys

    The SO Delicious Coconut milk is diluted badly. Try Aroyo-D for an actual coconut milk product worth the money. One can has 765 wonderful creamy calories. A perfect breakfast all by itself once in awhile on a busy morning.

    I'll be blogging a coconut milk ice cream recipe in the future. For now you can type in 'COCONUT MILK ICE CREAM RECIPE' on google and come up with lots of ideas.

    Most basic ice cream recipe is to get some frozen fruit, and drizzle in some coconut milk in your food processor. You want it thicker than a smoothie.

    You can also get Native Forest (very delicious) from Amazon for $21 per case when you subscribe to monthly shipments. That's organic, BPA-free coconut milk for $1.75 a can. The only other decent coconut milk (IMO) that cheap is Thai Kitchen, which you can score at Walmart for $1.50/can

    I made ice cream on Friday with two cans coconut milk, refilled one can with unsweetened almond milk, one packet of Sweet 'n Low (only sweetener I had in my house), a few drops of vanilla extract, and 3 squares of 65% chocolate. I would have preferred it sweeter, but it was still really good.
