    Celery Salad - Yum (Great with any Protein)

    I recently began eating Primal. I found this recipe on Foodnetwork and loved the celery Salad

    Otherwise here is the celery salad recipe. Simple, Refreshing and Tasty a great accompaniment to any protein

    Celery Salad
    1/2 small red onion, thinly sliced
    3 tablespoons chopped fresh parsley
    4 stalks celery, thinly sliced
    1 tablespoon plus 2 teaspoons extra-virgin olive oil
    1 lemon

    Directions
    Soak the onion slices in a bowl of cold water, about 10 minutes. Drain the onion and pat dry, then toss with the celery, 1 tablespoon olive oil and the remaining 2 tablespoons parsley in another bowl. Grate the zest from half of the lemon into the celery mixture and squeeze in all of the juice. Season with salt and pepper and toss.

    I love cooked celery - but I don't like the texture of it raw. I'll try this with very finely sliced celery and see if I can cope with that!

    OH MY LARD .... I made this yesterday, with the whole bundle of celery ... had some at lunch and then added in a cucumber, and let it sit in the frig till dinner time, it was so good !
    I'm going to making this often and occasionally adding in cucumber or thin sliced radishes .... YUMMY !!!
