What?! An ode to CABBAGE?!!!

So, my veggie box brings surprises, and I am happy. This week, cavolo nero -- a cabbage that is more like kale than cabbage and is *super yum!*
Trick: you have to cut it and let it rest for 5-10 minutes, because apparently the enzymes on the leaves get to working after you cut it, and makes it yummier and more nutrient dense.
I've used Cavolo for my pleasure many times this week. LOL
1. cavolo nero "noodles." I cut them into long ribbons (keeping the stems even), and then sauteed in bacon fat, garlic, and onion. served beneath meat balls and tomato sauce.
2. cavolo nero "warm salad" -- same noodle-like shape, sauteed in butter, tossed with roasted veggies (carrots, parsnips, onion, fennel, garlic also in butter) and beautiful slices of oranges and some chopped pistachios. Easy dressing of salt, pepper, paprika and a bit of EVOO. And guess what? It was served beside roasted chicken.
3. cavolo nero chips -- nuff said. fragile like kale chips, so not great for dipping.
6. chicken "noodle" soup. I cut a bunch of veg into ribbons, and also added some cavolo nero at the end.
DUDES. when winter comes, grow or get you some Cavolo Nero. It's a bit sweeter than kale, and YUM as.![]()

some days, there's not much difference between the DH and a cabbage.
Today, I had it steamed with fresh broccoli and cauliflower, using our own home made chicken stock (which is *good*), and then tossed through some thinly sliced roasted red peppers. SO GOOD.
I'm telling you, I love this stuff. And, he doesn't leave his laundry on the floor.
