I've heard of crystals, but not syrup...
Hi Mark!
I was wondering what you thought of coconut syrup. I read the Definitive Guide to Sugar that mentioned coconut sugar but was wondering if you had any more thoughts of this type of sugar.

What I found was a bulk bin item that the ingredients list simply stated as "coconut syrup". I've tried the flavor and it's very sweet but not much taste otherwise.

what color is it? I know I've gotten "coconut caramel" at asian markets before, it's all smokey and sweet and looks like molasses...

You can coconut syrup that is the same thing as coconut sugar, but it less dehydrated. From my understanding, the raw ingredient from the coconut tree is has some water taken out to become a syrup, then even more taken out to form the crystals/sugar.
