I think most people would not eat it after 5-ish days. I would smell it, and maybe take a little nibble and if that seemed okay I would eat it. I have an iron stomach though. Also, I imagine if you boiled it, it would be okay.
Is it still ok to eat today (Saturday)? It looks fine... it smells fine... its been in the fridge the whole time. It was a monster huge bird, 9lbs, that I roasted late Monday evening. I've been eating it all week, but didn't yesterday and I'm just not sure about today.
Anyone?
I was also going to use the carcass for soup, but don't want to if its going to make me ill.

No problem. Let your nose decide. I often use chicken for salad several days after I roast it - as long as it has been in the fridge and smells good. A friend of mine will discard any leftovers older than 20 hours (meaning that she would not eat the rest of her dinner for dinner on the subsequent day). I almost started crying when she told me. So much waste. I hope she at least cooks fairly small portions and does not throw away food too often.
I'd probably eat it. But it takes a lot for me to get food poisoning
As far as the carcass goes, if you're going to simmer it for a 24 hr period (or something like that) I'd imagine there wouldn't be any bacteria that would survive that.
