Getting organ meats from the butcher
I'm totally new to this, so please tell me if this makes sense:
Liver: get it cubed
Heart: get it sliced thin

I'm not sure the butcher would cut it for you.....they sell it dirt cheap all in one piece, in my experience. You can buy a whole beef heart and tongue for under 15 bucks around these parts. Wouldn't go through the trouble of having it sliced....

I'm getting a side of beef and it comes butchered. Since I suck at cutting up meat, I figured getting it prepared made more sense.

It depends on your butcher. I would say most would do it for you, and at the very worst would charge a small fee for the extra effort.

I get my liver sliced finely. It cooks quickly and stays tender like that. Cubes - the outside would be tough as nails by the time the centre was cooked to pink.
