    no, i haven't. i'd imagine the glycemic load of the manioc would be buffered a bit by the fat and protein in the egg, cheese, and cream.

    These make a great post work out wrap thingy. I am gonna try the dessicated coconut and butter thing Rivvin. Thanks for posting that up.

    I just want to say this is now my most favorite thing ever. I cut the recipe to 1/4 cup manioc flour, 1 egg, 3 tbsp dried coconut, and 1 tbsp of flax meal and then roll it into a ball.

    I then put it between two small sheets of parchment paper and then smash it between the backs of two dinner plates.

    After I have a nice, pressed "tortilla" I pan fry it and make a sandwich.

    Fucking amazing and only 26 carbs.

    Today on a whim I tested two alternatives to the classic Cauliflower Pizza. If you haven't made these before, they are rounds that can be used for pizza, tacos, enchiladas or tostadas. I liked both versions better than the cauliflower. The cabbage version had great texture:

    Cabbage or Spinach Pizza Shells or Tortillas
    Makes 2 six" rounds

    1 egg
    1 cup shredded cheese
    1 cup shredded cabbage ( packaged coleslaw mix)*

    Preheat oven to 450.
    Mix thoroughly.
    Spread 1/3 cup scoops on throughly greased cookie sheet ( Silpat or Non-stick Reynolds Foil are even better). Press into thin circles
    Bake for 12-15 minutes until golden.
    Cool on a wire rack.

    Top with your favorite pizza toppings and bake until melted, or use taco toppings.
    Variations: roll into enchiladas, fold for quesadillas, make smaller ones for tostadas

    *Or use finely chopped fresh spinach instead of cabbage.

    I will try this, sure, but it's going to be hard to beat the manioc flour! I'll try them when I next go get groceries.
