I submitted my recipe for Salmon-Leek chowder to the recipe contest, but dagnabbit, someone else's chowder recipe topped mine! Despite my shame, I'm posting my recipe because I think it's pretty darn good.
Salmon-Leek Chowder
1 lg onion, chopped
4 sm or 2 lg leeks, sliced fine
1 Tbs butter
1 quart chicken broth (homemade is best)
1 can salmon
2 cups milk and/or cream
paprika and pepper to taste
Saute the onion and leek in butter until soft. Add chicken broth and simmer for a few minutes. Add salmon, including liquid from can, and chop up larger chunks. Add milk and/or cream. Season with paprika and pepper. Heat until hot, but do not boil.
