Realistically, for the amount you'll probably be eating, it isn't going to matter.
So...according to Sally Fallon the reason you want raw honey is that it still contains enzymes that help break down carbohydrates. And it's supposed to have more nutrients.
You just can't heat it, or you lose this "benefit". I don't know if this is documented anywhere or if Fallon's pulling it out of her...hat. Maybe do some searching with that in mind? Good luck!
I personally like raw honey because...wait for it...it tastes better. I can taste the flowers. I can't taste the flowers in the honey bear. Sorry, honey bear.

LOL! I actually like chewing on beeswax. It's like honey gum. It's more expensive than regular honey though so I don't bother often.
The bear is just a container. There are many grades and brands that use it. There are some great, local, wild honeys that are bottled in the bears, and there are some mass produced honeys made from HFCS in the bears. You have to read the label to know what you are getting.
What is this honey bear of which you speak?
Don't worry... I just googled. Never seen anything like it in UK. Honey comes in plain glass jars.
