thinking about trying to make pumpkin custard
I don't have a specific recipe listed, so I am just winging it. I am considering making some sort of a pumpkin custard with canned pumpkin (strangely, I found only boxed pumpkin at my local Shaw's), cream cheese, a couple eggs or so, a bit of splenda, some melted butter, cinnamon, nutmeg, bit of salt, and maybe some coconut milk depending on the consistency when the pureed and cream cheese are mixed together. Bake at 350 degrees for an hour.
So basically what you are trying to make is pumpkin pie.
Mark has a recipe for primal pumpkin pie filling here, although most pumpkin pie filling recipes (in fact custard recipes in general) are pretty primal to begin with so long as you omit sugar. If you want to just go for it and make a pie, try combining it with his recipe for chocolate chip cookies as a crust (pat and mold it into a greased pie plate with a spoon).
Or pumpkin cheesecake, since there's cream cheese... :P
