A version of this recipe didn't make the cookbook cut. But I've been loving it, so I thought I'd share.

Love them with butter and a squeeze of fresh citrus.

Pumpkin Pancakes (for one)

1 egg, separated

2 T pumpkin puree

2 T almond meal

dash of pumpkin pie spice or cinnamon

Beat egg white. In a separate bowl, mix remaining ingredients. Fold in egg whites.

Cook in heated pan in fat of choice. Makes 3 pancakes (small is better as batter is delicate).
