    Hello Folks.


    My husband is a big fan of eggnog and I see a few posts talking about it but no recipes.


    I find that many of the standard recipes are so sugary and since I don't drink it myself I'm afraid to mess with it on my own. Any help would be great!

    I'm going to try making it out of raw goat's milk and eggs from the Amish farm nearby. Here's the recipe I intend to use.


    Ingredients:


    3 cups (we use goats milk)

    8 large eggs

    1 cup sugar (going to try erythritol or stevia)

    pinch of salt

    2 cups heavy cream

    1/3 cup bourbon or cognac

    1 teaspoon vanilla


    The original recipe calls for heating/cooking it, but I'm just going to go at it with a blender and drink it raw.

    Thanks! I might try your recipe and play with decreasing the sugar or swapping it out.

    From what I gathered from a couple of different recipes, the cooking is actually to thicken the egg nog, which makes sense. So if DR uses just heavy cream then hers will be pretty darn thick already But if you use whole milk instead you'll want to cook it to thicken it up before chilling it. If you use pastured eggs there's really minimal concern for any food born illness, but that's a personal call for sure. I really want to make some, but hubby doesn't like egg nog and I'm always done with it for the year after 1 glass. It's so rich!

    hannahc, thx for the info. Most likly 1/2 and 1/2 is my go to milk. I don't think I could handle it that thick. Knowing me, I'll make egg soup. ugg.

    You can do it g2! Just be sure to temper the egg yolks first (pour a bit of the hot liquid into a dish to cool just slightly, then mix it into the egg yolks to warm them up). Then, you'll be able to slowly pour the yolks into the whole milk mixture without scrambling them.

    Thanks for this. I saw some eggnog at the store today and was looking for some primal versions.

    I would be curious how your other recipes turned out, and if you have improved on them since last year!
