My second all-time EP fave. It combines the three foods I love the most: BACON, CHARD, BUTTERNUT SQUASH. I'm embarrassed to say I ate the entire thing all by myself the first time I made this. It's that good.

Skillet Butternut Squash and Greens | Everyday Paleo (and bacon!)

Tip: Press the easy button and get a bag (or two) of peeled, diced butternut squash at Trader Joe's. It will cut down significantly on your prep time.

I would not know if this freezes well; it's never made it that far.

Hi I LUUUUVVVV butternut chicken. I chuck some chicken in a baking dish with butternut squares spinkle crushed chillies, cardamon, garlic, cinnamon, salt and add a cup of coconut milk to it - mix everything, cover with foil and in the oven (190 Deg C) for about an hour - then remove the foil and leave in oven for another 30 minutes. I made a huge dish and keep it in the freezer in smaller portions as my back up meal for days when i am not sure what to cook

Thanks Karin - first, tell me about bacon wrapped eggs. Any new combination of these two is always going to be a winner - how do you put this together?

I put pictures into my posts using what's called BBcode - this is the formatting language for forum boards. Many picture hosting sites including Flickr, Photobucket an so on have BBcode sections as part of their sharing. I just use the raw code, which is [ img] (I have had to put a space in there so that the forum does not hide it) then the address of the picture hosted elsewhere on the internet (right-click and choose 'link to picture' or similar depending on your browser) and then [ /img] to finish.

    So, that's

    [ img]http://locationofyourpicture.com/picture.jpg[ /img]

... without the spaces and your picture will appear in-line in your post.

That's good to hear Karin, I'm glad you enjoyed it.

I certainly enjoyed my breakfast (at 11:30) of bacon wrapped eggs - thanks for the idea!

I pepped mine up with a good splash of Tabasco on the yolks.
