    Spicy ranch chicken salad with marinated beets and beet greens

    You will need:
    -Chicken breasts, poached & shredded
    -Beets with greens attached
    -Homemade mayonnaise
    -Fresh chives
    -Balsamic vinegar
    -Extra virgin olive oil
    -Spices: onion powder, garlic, chipotle powder, sriracha, salt & pepper
    -Feta or goat cheese

    Chicken salad:
    Combine mayonnaise with chives, onion, garlic, chipotle, sriracha, salt and pepper.
    Stir in buttermilk until you reach your desired consistency.
    Combine with shredded chicken.

    Marinated beets:
    Peel beets, slice into bite-size wedges, and boil in liberally salted water until soft (but still firm, not falling apart).
    When done, toss with minced garlic, olive oil, balsamic vinegar, salt and pepper. Chill in fridge.

    Tear off and wash the greens, chop, and lightly saute with olive oil, garlic, salt and pepper.

    Lay everything out on a plate and top with crumbled feta or goat cheese.

    Looks awesome. I've been craving some beets. They are still expensive at the grocery store. Hopefully they'll show up at the farmer's markets here soon.
