    So, if saturated fat and cholesterol don't necessarily cause an arterial plaque build-up (and therefore heart disease/coronary heart failure), what DOES?

    Yep--my (basic) understanding is that cholesterol is what the body uses to "treat" the plaque problem that arises because of inflammatory factors. So it's implicated in heart disease in a correlative way, but this has been crudely misinterpreted to mean causation.

    I think of cholesterol as a repair hormone. Carbs cause the inflammation or damage and cholesterol goes there to repair it. It is like blaming the fireman for the fire because he was a the scene.
