This was dinner last night:

Curry sauce:
One can of coconut milk
Thai red curry paste
Fish sauce
Lime juice
Fresh ginger

I made a big pot of cauliflower rice and added some butter after draining.

I grilled a side of sockeye salmon.

"Rice" on the serving platter first, then the fish (skin removed), then the heated curry sauce, topped with basil, cilantro, and diced and de-seeded Serrano peppers.
