I'm totally digging homemade mayo. It's so ridiculously easy, I don't know why I've been buying it all these years! Going to make my own chipotle mayo (have made it using store bought mayo in past), as soon as I finish off the ginger mayo I made on Friday.

    Yay mayo!!
I am going to try 2 egg yolks, 2tsp vinegar, 1 tsp mustard, and ~1c of a sesame oil (non toasted) + lard mixture. Maybe a little olive oil, too, but that always makes it bitter for me...I dunno why?

I still need to try making it, and since I just bought a big chunk of organic garlic jack cheese, I'm in the garlic mode pretty hardcore.

I always use EVOO instead of regular olive oil. It also helps if your olive oil is fresh. We go through a big bottle every month, so I'm always using fresh ingredients. Try that?
