    How Do You Wash Mushrooms?

    What's the best way of washing mushrooms, either whole or sliced mushrooms that you buy? I assume these are not sprayed with pesticides or chemicals, even though they're not labeled as organic.

    I usually dip them in water and rinse a few times. Should you be more careful about washing mushrooms? Anyone soak them like you would grains or legumes overnight?

    I don't wash mine ... I have a mushroom brush that I use occasionally, but the majority of the time I use a damp paper towel to remove any of the debris on them. Soak them ? Never ...

    if they're sliced I assume they're already cleaned before slicing. Maybe a bad assumption, but it hasn't killed me yet.

    I usually wipe with a paper towel. If I am putting them in a soup or stew, and not sauteing them first, I go ahead and wash them.

    I've always lightly scrubbed off the dirt (or most of it, anyway) on them while under running water. Not necessary?
    I'm retraining and strengthening my taste buds, one primal meal at a time.

    Alton Brown did a show on mushrooms and debunked the myth that mushrooms absorb water when you wash them.
    Soak them in a bowl of water for a minute or two, slosh them around a bit to loosen any grit, take them out and pat dry with towel. slice etc.
    I also learned a great tip from my dad, (a mushroom farmer) When you cook mushrooms, start them in a dry (no oil) non stick pan Medium,high heat, with a dash of sea salt, let them go for a good 5-10 minutes stirring frequently, They will let go of a lot of water (concentrates the flavor). When they start to look a little dry add olive oil or my favorite BUTTER, fresh thyme, a little garlic and a dash of curry powder(just a little brings out the natural earthy flavors) pepper. EAT.
    Try this and tell me its not the best way to saute a mushroom.
