hey, just saw this and remembered you were looking for a way to make coconut milk?

    Coconut Milk Tonic

    The Players
    1 can whole coconut milk
2 1/4 cups water (or coconut water)
2 tablespoons maple syrup (or a pinch of stevia)
    1 teaspoon pure vanilla extract
1 teaspoon dolomite powder (for calcium)

    The How-To
Mix all ingredients together in a medium saucepan over medium-low heat and heat until warm and dolomite is dissolved. Cool before serving.

I haven't used this one (I still get the Trader Joes coconut milk and add water), so I don't know for sure it works, but I think it would be cheaper and definitely have less ingredients in it than a quart of coconut milk in a carton.

currently in battle with my body.. the cold, windy rainy weather makes me just want to curl up with anything grain or chips..much less sugar. I went to get a cup of coffee and a snack.. had some cheddarwurst dogs and 1 oz cheddar.. The cheddarwurst (which are a secret sin-- well not so secret now) are not the best thing to eat but I figure it beats a lot of other options. I have to remind myself, my focus is to dump grains first, then sugar.

yep, best to focus on one thing at a time. Coffee, tea, and broth are always a good way to put off a snack for me, and sometimes they completely replace it. I rarely eat with my hot drinks so they tend to separate me from the urge to eat.

So.. last night went to the grocery store because my fridge was kinda bare and that means no good food in the house, ucky food will be consumed. Lily wanted cookies.. I told her she could pick some out ONLY if they had nuts! HA! DUH! Learning! That will keep me out of them!

No grains yesterday.. however, I thinkI am in ketosis?? I have not checked but my urine is rank to be honest. Also, the increased fat and protein and less carbs my gut is adjusting (we will leave it at that).

I am feeling better physically and getting there mentally. The sun is back today even if the super nice temps are not.

This weekend, come hell or high water I am tackling the house. Its so messy everything appears crowded. Weight the same today, maybe down 1- hard to tell and I am blind (its not digital).
